A standing reservation goes LIVE!
It’s been a moment since I’ve done a live cook along, but since we’re celebrating ONE year of the newsletter, I thought, what a better way to celebrate than to cook a pasta…with all of you! I took a look at the most cooked recipes from the newsletter and it just so happens that you all love carbonara. And so much so that a few of you have told me that you’ve made the recipe on repeat - music to my ears! But more than a few of you have asked how to avoid scrambling eggs, which, as you know, can be problematic for the final look and feel of this dish. My hope (fingers crossed because you never know) is that I’ll teach you how to master the art of a silky and gorgeous carbonara. No pressure to cook along in the moment because a recording of the live streamed video will be shared with you all here. So if you can’t make it or maybe your time zone doesn’t match up with a bowl of carbonara, you’ll be able to re-watch at your leisure (although carbonara for breakfast doesn’t sound half bad, but maybe you’d want to scramble eggs and cook off some bacon at that point instead).
Here’s the deal…I’ll be live-streaming on YouTube, but the space will be private and only for a standing reservation subscribers so it’ll feel like we’re at our own dinner reservation together. You’ll have to bear with me through any and all technical difficulties, but my hope is that if all goes smooth and we enjoy cooking together in this space, we can slot in more of these fun cook alongs! As someone who works in television and digital production (side bar…I’m available for all of your company’s digital content, copy write, and production needs or…are you a production company looking for a production manager? Let’s chat!) I should be hyper fixating on the production value of this live-stream but instead, I will be hyper fixating on the cheese to egg to guanciale ratio and I’m very much OK with that. Maybe once this becomes a regular thing, I’ll up the production value but for now, I value helping you get a delicious plate of pasta on your tables.

Below are the ingredients for our cook along as well as some key tools you’ll need for making the best carbonara.
Key Tools:
Large metal mixing bowl or a bowl that can resist heat
Kitchen tongs
Ladle
Ingredients for the cook along:
Serves 4
150g guanciale
50g pecorino
50g parmigiano
320g mezze paccheri or the classic, spaghetti (allow about 80g of pasta per person)
5 egg yolks (and a little bit of the egg white)
